Ingredients
For the Steak:
1½ lbs American Wagyu Outside Skirt Steak
2 tbsp olive oil
1 lime, juiced
2 cloves garlic, minced
1 tsp chili powder
1 tsp cumin
Salt and black pepper to taste
For the Fajitas:
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, sliced
1 tbsp olive oil
8 flour tortillas
Optional toppings: sour cream, guacamole, salsa, shredded cheese
Instructions
Marinate the steak:
In a bowl, whisk olive oil, lime juice, garlic, chili powder, cumin, salt, and pepper. Add the steak and coat well. Marinate at least 30 minutes, up to 2 hours.
Grill:
Preheat grill to medium-high heat. Grill steak 3–4 minutes per side, or until internal temperature reaches 130°F for medium-rare. Remove and rest for 10 minutes.
Cook vegetables:
In a skillet, heat olive oil over medium heat. Add peppers and onions and sauté until tender and slightly charred, about 6–8 minutes.
Assemble:
Slice steak thinly against the grain. Serve with warm tortillas and sautéed vegetables, plus your favorite toppings.
